Cheesy Polenta with Zucchini
Ingredients
- 30 g of polenta
- 1/2 cup of water
- 2 tbsp of nutritional yeast
- juice of half a lemon
Preparation
Chop the zucchini into small cubes and add all the ingredients, preferably in a non stick pan, and stir until the polenta is cooked through
Season with salt
You can add a teaspoon of nut butter (cashew, almond, tahini) in to make a creamier polenta
