Cheesy Polenta with Zucchini

Ingredients

  • 30 g of polenta
  • 1/2 cup of water
  • 2 tbsp of nutritional yeast
  • juice of half a lemon

Preparation

  1. Chop the zucchini into small cubes and add all the ingredients, preferably in a non stick pan, and stir until the polenta is cooked through

  2. Season with salt

  3. You can add a teaspoon of nut butter (cashew, almond, tahini) in to make a creamier polenta
