Cheesy Quinoa Stuffed Bell Peppers

Ingredients

  • 150g quinoa
  • 1 tin tomatoes
  • 4 large capsicums
  • 100g grated cheddar cheese
  • Salt and pepper to taste
  • 1/2 cup fresh herbs (parsley and coriander)

Preparation

  1. Pre-heat the oven to 180C and line a baking tray with baking paper.

  2. Halve the capsicums and place them in the oven to partially cook. Meanwhile, cook the quinoa until light and fluffy.

  3. Once cooked, mix in the tinned tomatoes, herbs, salt, pepper, and grated cheese. Stuff this mixture into the halved capsicums and return to the oven for an additional 15 minutes to bake.

  4. Remove from the oven and serve with a fresh side salad.
