Chickpea Omelette
Ingredients
- 1 cup chickpea flour
- 1 1/4 cup water (you can substitute this or half of it for plantbased milk)
- 1 heaping tbsp flax meal
- 1 tbsp nutritional yeast
- 1 tsp salt
- 1/2 tsp smoked paprika
- 1/4 tsp turmeric
Preparation
Simply combine everything, let it sit for a couple of minutes to thicken and bake them in a heated pan
I spread some spicy hummus on them and topped them with baked mushrooms, avocado, sprouts, tomato and chili flakes
