Chickpea Omelette

Ingredients

  • 1 cup chickpea flour
  • 1 1/4 cup water (you can substitute this or half of it for plantbased milk)
  • 1 heaping tbsp flax meal
  • 1 tbsp nutritional yeast
  • 1 tsp salt
  • 1/2 tsp smoked paprika
  • 1/4 tsp turmeric

Preparation

  1. Simply combine everything, let it sit for a couple of minutes to thicken and bake them in a heated pan

  2. I spread some spicy hummus on them and topped them with baked mushrooms, avocado, sprouts, tomato and chili flakes
