Creamy Lemon Pasta with Crunchy Radish Toppings
Ingredients
- 2 portions spaghetti
- 1 lemon, zest freshly grated and juiced
- 2 tbsp plant-based cream fraiche
- 1/2 pack plant-based cream
- 4 tbsp plant-based butter
- 3 tbsp nutritional yeast
- Salt and pepper, chili
- 5 radishes
Preparation
Cook the spaghetti (keep some of the water).
Zest the lemon.
Squeeze the lemon juice into a bowl.
Heat up the lemon zest and cream in a pot.
Simmer for about two minutes.
Turn down the heat and mix in the butter little by little.
Turn to medium heat and add about 100ml of pasta water and the lemon juice.
Add the plant-based cream fraiche and nutritional yeast.
Add the pasta to the sauce and combine well.
Add more pasta water if not creamy enough.
Season with salt, pepper, and a hint of chili.
Garnish with some sliced radish and a couple of lemon twists.
