Edamame Kale Cranberry Salad
Ingredients
- 1/4 cup vegan mayonnaise
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 1/2 tsp dijon mustard
- a pinch of salt & pepper
- salad:
- 1 bunch of kale, finely chopped
- 1 cup edamame beans, cooked and cooled
- 1 large carrot, shredded
- 1/2 cup dried cranberries #oceanspray
- 1/3 cup pumpkin seeds
- 1/4 cup green onion, finely sliced
- 3 tbsp parsley, finely chopped
- 1 tbsp mint, finely chopped

Preparation
Whisk all dressing ingredients together and thin out with a bit of water
Toss dressing with salad ingredients and let sit in the fridge to absorb the flavour
The longer it sits the better
