Edamame Kale Cranberry Salad

Ingredients

  • 1/4 cup vegan mayonnaise
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1/2 tsp dijon mustard
  • a pinch of salt & pepper
  • salad:
  • 1 bunch of kale, finely chopped
  • 1 cup edamame beans, cooked and cooled
  • 1 large carrot, shredded
  • 1/2 cup dried cranberries #oceanspray
  • 1/3 cup pumpkin seeds
  • 1/4 cup green onion, finely sliced
  • 3 tbsp parsley, finely chopped
  • 1 tbsp mint, finely chopped

Preparation

  1. Whisk all dressing ingredients together and thin out with a bit of water

  2. Toss dressing with salad ingredients and let sit in the fridge to absorb the flavour

  3. The longer it sits the better
