L Miss E Left the Red Cabbage and Declared It Was Celery

Ingredients

  • olive oil⠀
  • - 200g bacon bits⠀
  • - 1/4 red cabbage⠀
  • - 2 cloves garlic⠀
  • - 2 red peppers⠀
  • - 3 large handfuls of mixed frozen veg⠀
  • - 1/2 tin chopped tomatoes⠀
  • - 1 tbsp tomato purée⠀
  • - lemon juice⠀
  • - black pepper⠀
  • - chilli flakes⠀
  • - parsley⠀

Preparation

  1. Heat a little olive oil in a large pan. Add the bacon and cook.⠀

  2. Add the chopped #redcabbage, crushed garlic and peppers. Let these soften.⠀

  3. Now add the frozen veg and chopped tomatoes, tomato purée and leave to simmer.⠀

  4. Finish with a large squeeze of #lemonjuice, pepper, chilli flakes and chopped fresh parsley.⠀
