Microwave Butter Bean and Spinach Curry
Ingredients
- 2 tins butter beans, drained
- 300g frozen spinach
- 1 tin coconut milk
- 3 tablespoons tomato purée
- 1 tsp minced ginger
- 1/2 to 1 tsp turmeric
- 1 tsp cumin seeds
- Salt to taste
Preparation
Toast the cumin seeds in a frying pan if possible to bring out the flavor
Put all the ingredients into a bowl and mix well
Cover with a heavy plate and microwave on high for 10 minutes in a 1000W microwave; adjust time based on your microwave's wattage to ensure it is piping hot
Stir and serve with rice or naan
Tips
Microwaving food does not make it radioactive
This is a delicious and nutritious meal
Use fresh spinach if available instead of frozen
