Microwave Butter Bean and Spinach Curry

Ingredients

  • 2 tins butter beans, drained
  • 300g frozen spinach
  • 1 tin coconut milk
  • 3 tablespoons tomato purée
  • 1 tsp minced ginger
  • 1/2 to 1 tsp turmeric
  • 1 tsp cumin seeds
  • Salt to taste

Preparation

  1. Toast the cumin seeds in a frying pan if possible to bring out the flavor

  2. Put all the ingredients into a bowl and mix well

  3. Cover with a heavy plate and microwave on high for 10 minutes in a 1000W microwave; adjust time based on your microwave's wattage to ensure it is piping hot

  4. Stir and serve with rice or naan

Tips

  1. Microwaving food does not make it radioactive

  2. This is a delicious and nutritious meal

  3. Use fresh spinach if available instead of frozen
