Mint and Pineapple Sparkle Drink
Ingredients
- 1 small pineapple, skin removed and cut into large cubes then frozen
- 1 cup of tightly packed organic spinach, washed and drained
- 1/4 cup fresh mint leaves
- 1L bottle of sparkling water or club soda
Optional
- a few teaspoons of low-FODMAP sweetener
- crushed ice for serving or blending
Preparation
Place the pineapple, mint, spinach, water and sweetener in a high-speed blender and process until smooth
Pour into tall glasses and top with crushed ice, fresh pineapple slices or a few mint sprigs
