Mint and Pineapple Sparkle Drink

Ingredients

  • 1 small pineapple, skin removed and cut into large cubes then frozen
  • 1 cup of tightly packed organic spinach, washed and drained
  • 1/4 cup fresh mint leaves
  • 1L bottle of sparkling water or club soda

Optional

  • a few teaspoons of low-FODMAP sweetener
  • crushed ice for serving or blending

Preparation

  1. Place the pineapple, mint, spinach, water and sweetener in a high-speed blender and process until smooth

  2. Pour into tall glasses and top with crushed ice, fresh pineapple slices or a few mint sprigs
