Mint & Pineapple Sparkle


  • Makes: approx. 4 servings
  • Time taken: 5 minutes
  • Nourishing Ingredients
  • • 1 small pineapple, skin removed and cut into large cubes then frozen • 1 cup of tightly packed organic spinach, washed and drained • 1/4 cup (small handful) of fresh mint leaves
  • • 1L bottle of sparkling water or club soda (I like San Pellegrino) • Optional: a few tsp of your favourite low-FODMAP sweetener


  1. Crushed ice to serve/blend

  2. To Create: • Place the pineapple, mint, spinach, water and sweetener (if desired) in a high-speed blender and process until smooth

  3. Pour into tall glasses and top with crushed ice, fresh pineapple slices or a few mint sprigs
