Pancakes

Ingredients

  • 1 medium ripe banana
  • 1 large egg
  • 1/3 cup oat flour
  • 1 tsp cinnamon

Preparation

  1. Put the banana in a bowl and mash with a fork

  2. Add the egg and mix until well combined then add the oat flour and cinnamon, and stir well

  3. Heat a pan over a medium heat with a dash of olive or coconut oil

  4. Spoon the mix into the pan to make individual pancakes, cook on one side for about 1 minute, then turn and cook on the other side for about 1 minute (or until golden brown on both sides)

  5. Serve with raspberries, peanut butter & maple syrup and enjoy
