Pancakes to Start the Day
Ingredients
- 1 medium ripe banana
- 1 large egg
- 1/3 cup oat flour
- 1 tsp cinnamon
Preparation
Put the banana in a bowl and mash with a fork.
Add the egg and mix until well combined then add the oat flour and cinnamon, and stir well.
Heat a pan over a medium heat with a dash of olive or coconut oil.
Spoon the mix into the pan to make individual pancakes, cook on one side for about 1 minute, then turn and cook on the other side for about 1 minute or until golden brown on both sides.
Serve with raspberries, peanut butter and maple syrup and enjoy.
