Parsley & Mint Sauce

Ingredients

  • half a cup olive oil
  • 4 tablespoon white wine vinegar
  • 1 clove garlic chopped
  • 1 banana shallot chopped
  • 2 teaspoons honey or sugar (or more to taste)
  • 1 cup of fresh mint
  • 1 cup of fresh parsley
  • 1 teaspoon dried oregano
  • salt & pepper to taste

Preparation

  1. Put the chopped shallot and garlic into a blender with the oil and vinegar and blend until smooth

  2. Add everything else and blend to desired consistency, then season with salt and pepper and more sugar if required

  3. Keep in the fridge until needed
