Pea Mint Soup with Crispy Croutons and Coconut Cream

Ingredients

  • 750 g frozen peas
  • 30 g fresh mint
  • 2 shallots
  • 3 garlic cloves
  • 1.2 l vegetable broth
  • 1 tsp. apple vinegar
  • Olive oil
  • Salt and fresh ground pepper

Preparation

  1. Start by sautéing finely chopped shallots in a large pot with olive oil. Add 1 minced garlic, 1/3 chopped mint, and sauté for a few minutes.

  2. Add frozen peas, stir, and pour in the vegetable broth. Let it simmer until peas become soft, about 5-10 minutes.

  3. Add the remaining 2 whole garlic cloves and the rest of the mint (reserving a few leaves for garnish). Season with salt, pepper, and apple vinegar. Use an immersion blender to blend the soup until smooth. Adjust seasoning as needed.

  4. Serve the soup with a drizzle of cream, whether classic or plant-based. Garnish with reserved mint leaves. Enjoy!
