Pea Mint Soup with Crispy Croutons and Coconut Cream
Ingredients
- 750 g frozen peas
- 30 g fresh mint
- 2 shallots
- 3 garlic cloves
- 1.2 l vegetable broth
- 1 tsp. apple vinegar
- Olive oil
- Salt and fresh ground pepper
Preparation
Start by sautéing finely chopped shallots in a large pot with olive oil. Add 1 minced garlic, 1/3 chopped mint, and sauté for a few minutes.
Add frozen peas, stir, and pour in the vegetable broth. Let it simmer until peas become soft, about 5-10 minutes.
Add the remaining 2 whole garlic cloves and the rest of the mint (reserving a few leaves for garnish). Season with salt, pepper, and apple vinegar. Use an immersion blender to blend the soup until smooth. Adjust seasoning as needed.
Serve the soup with a drizzle of cream, whether classic or plant-based. Garnish with reserved mint leaves. Enjoy!
