Seitan Ramen Bowl with Green Onion and Coriander
Ingredients
- 400g Seitan (homemade or store bought)
- 400g Ramen Noodles
- 4 Green Onion Stalks (sliced, white and green parts divided)
- 3 Garlic Cloves (minced)
- 20g Coriander (roughly chopped)
- 1250ml Vegetable Broth
- 20g Tamari (sub coconut amino)
- 20g Vegan Fish Sauce
- @powersuperfoods Nori Flakes (for garnish)
Preparation
Cook the seitan as per package directions, preferably oil-free in an air fryer.
While the seitan is cooking, in a large pot over medium heat, fry the minced garlic and white parts of the green onions until fragrant (about 1 minute).
In the same pot, add the vegetable broth, water, vegan fish sauce, and tamari. Bring to a boil, then reduce to a simmer. Add the ramen noodles and cook for 3-5 minutes, or until soft, stirring to loosen the noodles.
Divide the broth and noodles evenly into serving bowls.
Slice the cooked seitan into strips and distribute them among the bowls.
Garnish the bowls with the remaining green onion (green parts), chopped coriander, and nori flakes.
