Spicy Sardines on Toast

Ingredients

  • 1 can of sardines (i love brunswick sardines)_
  • 2 slices of tiger/sourdough bread
  • 1 clove of garlic
  • 1 chilli (red/green)
  • 4 cherry tomatoes
  • 1 spring onion
  • a few sprigs of coriander
  • juice of 1/4 lemon
  • 2 - 3 tbsp olive oil

Preparation

  1. Grate the garlic clove into a small bowl, chop + finely slice all the other ingredients and add to the bowl

  2. Add the lemon juice, olive oil and salt, mix well

  3. Taste and adjust if necessary

  4. Toast the bread until golden, cool for 5 minutes before serving

  5. Add the tomato salad on the toast, reserve some for adding over the sardines

  6. Place the sardines immediately on top, add the last bit of tomato salad and any juices in the bowl over the top

  7. Serve immediately and enjoy!
