Stuffed and Loaded Sweet Potatoes

Ingredients

  • weet potatoes
  • chickpeas a
  • lentil bolognese

Preparation

  1. You can soften your sweet potatoes ok the microwave after poking them with a knife or fork for a few minutes and the roast them in the oven

  2. Let them cool down, cut them in half. In a skillet with a bit of avocado oil, cook some onions and garlic, add carrots, let them cook and then add chickpeas and lentils

  3. I also added 1/4 c of chopped walnuts to give it a little meaty texture. Serve with a simple green salad or grilled veggies
