Stuffed and Loaded Sweet Potatoes
Ingredients
- weet potatoes
- chickpeas a
- lentil bolognese
Preparation
You can soften your sweet potatoes ok the microwave after poking them with a knife or fork for a few minutes and the roast them in the oven
Let them cool down, cut them in half. In a skillet with a bit of avocado oil, cook some onions and garlic, add carrots, let them cook and then add chickpeas and lentils
I also added 1/4 c of chopped walnuts to give it a little meaty texture. Serve with a simple green salad or grilled veggies
