This Recipe Makes 4 Crêpes
Ingredients
- 30 g oat flour.
- 30g buckwheat
- 30 g potato starch
- 2 eggs
- 1/2 cup of milk or water
- 2 tbspn olive oil
- 1 tbspn each of diced onion and parmesan cheese
- 1/2 tsp salt and some pepper
- add oil to a hot pan .
Preparation
Put all dry ingredients into a bowl. Beat eggs and add milk or water and add to dry Ingredients
Add oil to a hot pan
Swirl the batter around, until you have a thin even layer covering the pan. Once the edges are crisp, use a spatula to flip the crepe after about a minute at med to high heat
Let cool a little and fill with your favourite scrambled egg and veggie mix
