This Recipe Makes 4 Crêpes

Ingredients

  • 30 g oat flour.
  • 30g buckwheat
  • 30 g potato starch
  • 2 eggs
  • 1/2 cup of milk or water
  • 2 tbspn olive oil
  • 1 tbspn each of diced onion and parmesan cheese
  • 1/2 tsp salt and some pepper
  • add oil to a hot pan .

Preparation

  1. Put all dry ingredients into a bowl. Beat eggs and add milk or water and add to dry Ingredients

  2. Add oil to a hot pan

  3. Swirl the batter around, until you have a thin even layer covering the pan. Once the edges are crisp, use a spatula to flip the crepe after about a minute at med to high heat

  4. Let cool a little and fill with your favourite scrambled egg and veggie mix
