Tomato & Pepper Meze

Ingredients

  • 2 tbsp oilve oil
  • 1 diced onion
  • 3 cloves of garlic, sliced
  • 1/2 tsp salt (add to taste)
  • 1/2 tsp paprika
  • 1 tsp dried parsley
  • pinch of ground black pepper
  • 2 tomatoes, diced
  • 1 tbsp tomato puree

Preparation

  1. Heat olive oil in a pan, add the onion + garlic and salt, saute for a few mins till translucent

  2. Add the spices and saute for 2 mins

  3. Lastly add the diced tomatoes, pepper and tomato puree, if the dish seems dry add a splash of water to loosen

  4. Mix well and simmer over a gentle heat until everything is cooked through and soft

  5. Serve hot or cold alongside your main meals

  6. Refrigerate to keep fresh and use within 2 - 3 days
