Vegan Artichoke Grilled Cheese

Ingredients

  • 8 slices of sourdough bread or bread of choice
  • 1 (14oz can) artichoke hearts, in water
  • 2 tbsp vegan butter

Almond ricotta

  • 1 (14 ounce) package of firm tofu
  • 1 cup raw almonds
  • 1/2 tsp salt
  • 4 tbsp nutritional yeast
  • 1/2 tbsp garlic powder
  • 1/2 tbsp onion powder
  • 1/4 tsp pepper
  • 3 cups chopped spinach
  • 1/2 cup unsweetened almond milk

Preparation

  1. Make the Almond Ricotta by blending all the ingredients together until smooth

  2. Drain and chop the artichoke hearts

  3. Butter one side of each bread slice with vegan butter

  4. Assemble the sandwiches by spreading the Almond Ricotta on the unbuttered side of the bread, adding chopped artichoke hearts, and topping with another slice of bread

  5. Grill the sandwiches in a pan or on a griddle over medium heat until golden brown and crispy on both sides
