Vegan Chocolate Mug Cake
Ingredients
- 1 tablespoon unsweetened cocoa powder
- 2 teaspoons Dutch cocoa or additional unsweetened cocoa powder
- 3 tablespoons oat flour (made by blending dry oats)
- 2 tablespoons coconut or pure maple syrup
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1 tablespoon oil or nut butter
- 3 tablespoons plant-based milk
- 1/2 teaspoon vanilla extract
- Semi-sweet mini chocolate chips, amount as desired
Preparation
In a microwave-safe mug, combine all ingredients except the chocolate chips
Add semi-sweet mini chocolate chips
Stir to mix well
Microwave on high for 1 minute
Check for doneness
Microwave longer if needed, in 10-second increments
Top with additional chocolate chips and pure maple syrup, and serve
