Vegan Chocolate Mug Cake

Ingredients

  • 1 tablespoon unsweetened cocoa powder
  • 2 teaspoons Dutch cocoa or additional unsweetened cocoa powder
  • 3 tablespoons oat flour (made by blending dry oats)
  • 2 tablespoons coconut or pure maple syrup
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1 tablespoon oil or nut butter
  • 3 tablespoons plant-based milk
  • 1/2 teaspoon vanilla extract
  • Semi-sweet mini chocolate chips, amount as desired

Preparation

  1. In a microwave-safe mug, combine all ingredients except the chocolate chips

  2. Add semi-sweet mini chocolate chips

  3. Stir to mix well

  4. Microwave on high for 1 minute

  5. Check for doneness

  6. Microwave longer if needed, in 10-second increments

  7. Top with additional chocolate chips and pure maple syrup, and serve
