Vegan, Gluten-Free Strawberry Jelly Parfaits

Ingredients

  • 1~ coconut jelly:⠀
  • 1 1/2 cups of coconut milk⠀
  • 3 tbsp maple syrup⠀
  • 1 tsp vanilla extract ⠀
  • 1 tsp agar powder⠀
  • 2~ strawberries, cut into cubes⠀
  • as many strawberries as you desire. ⠀
  • 3~ tapioca pearls:⠀
  • 3 tbsp of mini tapioca pearls⠀
  • 4 cups of boiling water⠀
  • 4~ strawberry almond milk⠀

Preparation

  1. Whisk ingredients together and then heat up to the point of boiling

  2. Leave it bubbling for a minute and then transfer into a mold

  3. A rectangular plastic container works too

  4. After the jelly has cooled and set, pop it out of the mold and cut into tiny cubes

  5. Add the tapioca to the boiling water and keep bubbling for about 5 minutes

  6. Drain the mini pearls out using a fine mesh strainer

  7. Add the tapioca to the boiling water and keep bubbling for about 5 minutes

  8. Drain the mini pearls out using a fine mesh strainer
