Vegan Gluten-Free Strawberry Jelly Parfaits

Ingredients

  • 1 1/2 cups coconut milk
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp agar powder
  • Strawberries (as desired)
  • 3 tbsp mini tapioca pearls
  • Almond milk (as needed)

Preparation

  1. Whisk the coconut jelly ingredients together and heat to boiling

  2. Let it bubble for a minute, then transfer to a mold, cool, and set

  3. Cut the set coconut jelly into tiny cubes

  4. Cut strawberries into cubes

  5. Add tapioca pearls to boiling water and cook for 5 minutes, then drain

  6. Blend strawberries with almond milk to make strawberry almond milk

  7. Layer the ingredients in a cup with repeating layers of strawberry cubes, coconut milk jelly cubes, and tapioca pearls, then pour strawberry almond milk over the top
