Vegan Madrooba

Ingredients

  • 1. choose any vegetables and you want to use of any amount ( i used potatoes, carrots, mushrooms, tomatoes, spinach, dill and cilantro )
  • 2. minced garlic, ginger and long slivers of onion
  • 3.mixed spices ( again your choice) i used salt, pepper, cumin, all spice , cinnamon and garam masala
  • 4. dried lemon ( if not available just omit it and add the juice of a lemon at the end)
  • 5. oats
  • 6. water
  • 7. uf you want a red madrooba add some tomato purée and some fresh tomatoes ( if not just add more herbs and omit the purée )
  • 8. vegan stock
  • 9. coconut oil

Preparation

  1. Used a bit of the onions and caramelize for garnish and set aside

  2. Used the same pot with the remaining oil and sauté the onions , garlic and ginger

  3. Add the vegetables starting by the ones that need more cooking ( carrots and potatoes )

  4. After the veggies start to slightly cook and the other veggies ( like mushrooms, zucchini and eggplants )

  5. Add tomato purée , stock , dried lemon and spices

  6. Add water enough to cover the veggies and cook on medium heat until all veggies are cooked

  7. Add oats ( it should resemble a thick soup ) and cook for 15 minutes on low heat

  8. Adjust oats and / or water if needed

  9. Use a stick blender to blend everything into what looks like a very thick soup

  10. Adjust salt and lemon to taste and enjoy
