Zuchinni Loaf

Ingredients

  • 1 large zucchini, grated ( 3 baby marrow)
  • • 1/3 cup date/ maple syrup
  • • 1/4 cup water
  • • 1 tsp vanilla extract
  • • 1 1/2 tbsp chia seeds
  • • 2 tbsp nut butter
  • • 1/2 tsp apple cider vinegar
  • DRY • 3/4 cup old fashioned oats
  • • 1/2 cup almond flour
  • • 1/2 cup oat flour
  • • 1/4 cup brown rice flour
  • • 2 tbsp tapioca starch
  • • 2 tsp baking powder • 1/4 tsp salt • 1 tsp cinnamon
  • • 1/2 cup chocolate chips

Preparation

  1. Preheat oven to 180 °C and prepare a loaf pan with baking paper

  2. Mix all the wet ingredients in a bowl and pop in fridge for 10min

  3. Take out add oats and pop back in fridge for another 10 min

  4. Add all the dry ingredients and mix until well combined

  5. Pop in oven for 50 -55 min or until a fork comes out clean

  6. Store in air-tight container in fridge and reheat a slice before eating. (Makes choc chips melt?)
