Curtido ingredients, recipe adapted from @thekitchn :
~ 1/2 small cabbage - shredded, 1/2 small onion - sliced, 2 small carrots - shredded, 3 radishes - cut into wedges, 1 jalapeno - sliced
~ 1/2 cup apple cider vinegar, 1 cup water, 1 tablespoon oregano (preferably Mexican), 1 teaspoon salt
Place veggies in a big bowl and add the rest of the ingredients, toss well, and refrigerate. Best after 3 days but I ate mine in just few hours. ?Pupusa ingredients: Mix 2 cups masa harina, 1.5 cups + 2 tablespoons water, 1/4 tsp salt, 1 teaspoon oil in a large bowl and knead until well combined/dough is slightly formed. Covered with damp towel and let sit for 15 minutes. ?Filling: Fresh Spinach massaged with @followyourheart sharp cheddar, Refried black beans & cheeze
Wet both palms with water & some oil. Take a baseball size dough & press into circle to form a 'bowl' Then
add 1 tablespoon of filling. Bring all sides to seal. Pass the dough between palms back & forth until a round disk forms. Pan fry each side until lightly brown in a heated non-stick pan with a little oil.
