Spinach and Pine Nut Fried Rice
Ingredients
- 2.5 cups cooked Organic White Long Grain Rice
- 5 oz Baby Spinach finely chopped
- 1/3 cup Pine Nuts lightly toasted
- 2 tsp Toasted Sesame Oil
- 2 tsp of Soy Sauce
- 2 tsp of Rice Vinegar *Optional: 1 tsp Chili Paste
Preparation
In a warm pan spread the pine nuts in one layer
Gently move them around until they start to become aromatic or change color
Set them aside
In a food processor pulse the baby spinach until finely chopped
Sauté the spinach in the sesame oil and add the soy sauce & rice vinegar as its cooking
Once the spinach has cooked down, add in the cooked rice and mix well until completely incorporated
Lastly add in the pine nuts and cook everything for a few minutes until heated through, making sure to keep stirring
