25minute Chickpea Curry
Ingredients
- 2.5cups chickpeas
- 1 1/4c diced tomatoes
- 1.5tbsp tomato paste
- 2tbsp oil
- 1c coconut milk
- 1c water
- 2 curry leaves
- 2 cloves
- 1 tsp ginger
- 2tsp garlic
- 1/2tsp coriander
- 1/2tsp cumin
- 1 tsp tumeric
- 1 tsp chilli powder
- 1tsp garam masala
- 1tsp salt
- 1 1/4c dice onions
- 2c spinach
- cilantro
Preparation
Heat 1-2tbsp olive oil in a large pan on medium-high
Add curry leaves, cardamom, and cloves
Once leaves “pop” add garlic and ginger, followed by the onions
Sauté until onions are golden brown
Reduce heat to medium
Add diced tomatoes and sautée 3 mins
You can help them break down by squishing them with back of spoon once soft
Add tumeric, salt, coriander, chilli powder cumin, and tomato paste
Stir and cook about 1min
Add 1 cup of water & stir to combine
Add in chickpeas & stir/simmer 2mins
Stir in the coconut milk
Finally, add in the spinach & garam masala
Simmer on med-low for apx 5mins
Remove from heat & sprinkle with cilantro
Serve with rice, naan bread, and whatever else you’d like! ️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
