Chickpea and Spinach Curry with Homemade Naan

Ingredients

  • 1 sachet hart and soul tikka masala
  • 1 tablespoon olive oil
  • 1 small white onion, finely chopped
  • 2 tomatoes, chopped
  • 1 cup canned chickpeas
  • 2 tablespoon sour cream or plain coconut yogurt
  • 3 cups baby spinach
  • cooked quinoa, for serving
  • fresh parsley and roasted peanuts, for garnishing

Preparation

  1. Heat oil in a frying pan over medium heat

  2. Add onions and cook for 5 mins until golden brown

  3. Add in the rest of the ingredients except baby spinach, stir everything to combine and cook for another 5 minutes

  4. Add in spinach and cook for another couple of minutes

  5. Serve warm with quinoa, garnished with fresh parsley and roasted peanuts
