Chickpea and Spinach Curry with Homemade Naan
Ingredients
- 1 sachet hart and soul tikka masala
- 1 tablespoon olive oil
- 1 small white onion, finely chopped
- 2 tomatoes, chopped
- 1 cup canned chickpeas
- 2 tablespoon sour cream or plain coconut yogurt
- 3 cups baby spinach
- cooked quinoa, for serving
- fresh parsley and roasted peanuts, for garnishing
Preparation
Heat oil in a frying pan over medium heat
Add onions and cook for 5 mins until golden brown
Add in the rest of the ingredients except baby spinach, stir everything to combine and cook for another 5 minutes
Add in spinach and cook for another couple of minutes
Serve warm with quinoa, garnished with fresh parsley and roasted peanuts
