Cinnamon French Toast Bites

Ingredients

  • 2 thick slices of artisan bread (or any bread, your cubes will just be small and cute!)
  • 2 eggs
  • 1/4 cup milk of your choice
  • Splash of vanilla extract
  • Avocado oil for pan
  • 2 tbs sugar
  • 1 tsp cinnamon
  • Optional: powered sugar or maple syrup for toppings

Preparation

  1. Cut up your bread into cubes and set aside

  2. Whisk your eggs, milk, and vanilla extract together until well combined

  3. Add your bread cubes into the egg mixture and let it sit for a minute or two to soak up some of the wet mixture and soften up a bit

  4. Heat up a pan and cover it in butter or oil to make sure it's non stick and your French toast doesn't turn out dry

  5. Remove your soaked bread cubes from the egg mixture (make sure to drain off any excess egg) and cook in the pan for a few minutes until golden brown

  6. While that's cooking, mix your sugar and cinnamon in a separate bowl

  7. When your cubes are done cooking, dip them into the sugar common mixture immediately to coat
