Happy Meal Prep Monday

Ingredients

  • corn starch
  • nutritional yeast
  • Himalayan salt
  • and garlic powder
  • Air fry tofu
  • heat oil
  • minced garlic
  • ginger
  • vegetable broth
  • soy sauce
  • ketchup
  • maple syrup

Preparation

  1. Press tofu for a few minutes. Cut into cubes. Toss in a bowl with corn starch, nutritional yeast, Himalayan salt, and garlic powder

  2. Air fry tofu for 10 mins @400F. Shake. Fry for another 5-10mins

  3. While tofu is frying, heat oil on a skillet. Add minced garlic and ginger to the skillet and heat for 2mins

  4. Add vegetable broth, soy sauce, ketchup, maple syrup. Stir and allow to simmer to thicken. *I don’t really measure this out but I’d say about a cup of broth and 1-2tbsps of everything else

  5. Once the tofu is finished, add to the sauce

  6. Turn off the heat and fold tofu into the sauce to coat
