Kale, Peas & Protein Cheese Patties

Ingredients

  • 180g pack of organic kale
  • 1 cup frozen peas
  • 2 whole eggs
  • 1 cup protein cheese
  • 1 cup panko breadcrumbs
  • 1/2 tspn cayenne pepper
  • zest of 1 small lemon
  • 2 tbsp Parmesan
  • 1 medium white onion
  • Next time I would’ve added some green chillies and maybe even a little ginger

Preparation

  1. Steam the kale and frozen peas for 5 mins whilst you prepare other ingredients

  2. With kitchen roll, pat dry the steamed kale & peas before adding to the food processor to remove excess water

  3. In a food processor add all the other ingredients

  4. Scoop out even sized patty mix and for the patties with your hands and place straight onto a frying pan with some olive oil heated on it

  5. Serve with chilli sauce or plain yoghurt
