Pancake

Ingredients

  • 100g spelt flour
  • 1 tsp baking powder
  • 1/2 bicarb
  • 170g greek yoghurt
  • 2 eggs
  • 50ml milk
  • 1/2 tsp cinnamon
  • 100g blueberries

Preparation

  1. Mix the dry ingredients together (omitting the bluberries) and then the wet. Then combine them both

  2. Heat up some oil to a medium heat, then spoon in about 2 tablespoons of the mix to form a pancake shape, add about 5/7 berries and then cook for about 2 mins, until golden and bubbling around the edges. Then flip over and cook on the other side for the same amount of time. When they are puffed up and fluffy, they are ready. Serve with maple syrup or honey and crispy bacon
