Paprika Pork Loin Steaks in Creamy Garlic Mushroom Sauce

Ingredients

  • for the pork
  • 4 pork loin steaks
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic/celery salt
  • 20g knob butter
  • for the sauce
  • 200g chestnut mushrooms - thinly sliced
  • 1 tbsp finely chopped garlic
  • 1 tsp paprika
  • 1 tbsp freshly chopped parsley
  • 100ml chicken stock
  • 250ml double cream

Preparation

  1. Put the pork steaks in a bowl, add the olive oil, paprika and garlic salt and mix in, making sure all pieces are well coated, leave to marinate for 30 mins plus if you have time

  2. If you don’t have a large skillet cook the pork in two batches

  3. Add the butter to the skillet and on high, sear the pork, two mins in one side then 1-2 min on the other depending how thick they are

  4. Remove and set aside

  5. To the same pan, add the mushrooms, sauté for 5 mins before adding the garlic, sauté for a few more mins, then add the paprika and chicken stock, stir in the cream, bring up to a light simmer for 5 mins, season to taste, add the parsley, stir and place the pork into the sauce, warm through for few mins then cover and rest for a few mins before serving
