Pasta with Roasted Tomatoes

Ingredients

  • 10 oz cherry tomatoes
  • 3 tbsp olive oil
  • 1 tbsp dried basil
  • 7.5 oz pasta of choice
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp tomato paste
  • 1/4 cup plant based milk
  • Juice of 1 lemon
  • Salt and pepper to taste

Preparation

  1. Add the tomatoes to a baking dish, drizzle with 1 tablespoon of the olive oil, and add the dried basil. Roast at 180 degrees Celsius (350 degrees Fahrenheit) for 20 minutes.

  2. Meanwhile, cook the pasta until al dente.

  3. When the pasta is about halfway done, heat the remaining olive oil in a large pan and add the onion, garlic, and tomato paste.

  4. Cook for 5 minutes over medium heat until fragrant.

  5. Add the plant-based milk and drained pasta. Mix together, then add the lemon juice and season to taste with salt and pepper.

  6. Serve with the roasted tomatoes.
