1. Combine 3/4 C organic pumpkin purée, 1 tsp vanilla, 1/3 C @justins peanut butter, 1/4 C @swervesweetie granulated sweetener, and a pinch of salt using a hand mixer
2. Add in 2 1/2 C @bobsredmill gluten free rolled oats, 1/4 C pepitas, 1/4 C @sunfood cacao nibs, 2 TBSP @vitalproteins collagen peptides, 1 TBSP @allspicedsm Pumpkin Pie Spice, and 1 TBSP each of @navitasorganics hemp seeds and chia seeds
3. Fold in 1/3 C @lilys_sweets keto chocolate chips and 3-4 chopped @ndmedjooldates
4. If the mixture is too wet, add more oats, and if it’s too dry add more pumpkin or PB
5. Roll into balls (this recipe yields about 30) and refrigerate before eating
