Recipe for Zucchini Koftas

Ingredients

  • Peel and grate 1 big zucchini. Take gram flour, salt, chilli powder, corriander powder, chopped corriander leaves, green chilli ( optional) and turmeric powder. Mix all the ingredients to get a thick consistency and make kofta ‘balls’. Cook it in the paniyaram pan / fry them till they are crispy
  • For the curry/ gravy-
  • Take tomotoes and onion in 2:1 ratio, add ginger, few garlic pods and green chilli. Grind all of them together and make a paste. Take little oil in a wok and cook this paste till oil separates
  • Add salt, turmeric powder, corriander powder, cinnamon powder, cumin powder, crushed black cardamom, kastoori methi and pomegranate powder. Adjust these spices as per your taste. Cook the paste for around 10 minutes till you start getting the mild fragrance of all these spices. Add little water to adjust consistency and simmer it for 15 min. Now add koftas and garnish it with fresh corriander leaves. Serve hot with your choice of bread
