Sweet Potato Pancakes

Ingredients

  • DRY: 1 cup whole what flour, 2 tsp baking powder, 1/2 tsp cinnamon, 1/2 tsp salt
  • WET: 1 egg, 1 1/4 cup milk, 1 tbs brown sugar, 1 tbsp vegetable oil, 1 cup sweet potato purée or mashed (I did mashed). •

Preparation

  1. Whisk together dry & in separate bowl whisk together wet, add dry ingredients to wet and stir until combined. Heat large skillet and make 1 tbsp sized pancakes on medium heat. Cook for two minutes one side, flip & cook for one minute more. Topped mine with homemade blueberry chia jam, @chobani Greek yogurt, @sunbutter, @welchs antioxidant fruit blend, maple @cheerios
