Vegan Pancake

Ingredients

  • Banana (1 big or 2 small)
  • 200g oats (or how many you like)
  • 2 tbsp flax seeds
  • 1 scoop vegan protein powder (optional), I took the Mocca protein from
  • 200ml plant milk

Preparation

  1. Add water to get your preferred consistency (that the batter is fluent enough to easily pour it in a pan but not too fluent)

  2. If you don’t use protein powder I recommend cacao powder

  3. Put all the ingredients in a blender and blend until smooth. Heat a non-sticky pan to medium heat and pour in the dough in pancake shapes. Use two pans so you can make them faster. You don’t need oil, just don’t heat too high and wait until one side is really solid. Flip and stack

  4. Secret sauce: Take the blender with the remains of the batter in it, add dates and cacao powder. Blend and pour it over your pancake stack

  5. I also like to add sliced banana & frozen berries and let them melt over my stack

  6. If you don’t add toppings I recommend putting dates in your batter so it becomes sweeter but I like my toppings sweet and my pancakes creamy oaty lik
