Vegan Thai Green Curry

Ingredients

  • 5 shallots
  • 4/5 big green chillies
  • thick thumb of ginger
  • 6 cloves of garlic
  • juice from 1 squeezed lime
  • 2 lemongrass stalks
  • vegan fish sauce (or soy sauce)
  • small bunch of coriander
  • 1 tsp a of ground cumin and crushed coriander seeds
  • salt
  • pepper and a gulg of oil

Preparation

  1. Blend that into a paste! Done

  2. Then to make a curry add as much paste as you’d like to a pan (I like a lot) and fry off for ten mins on a low heat

  3. Add coconut milk

  4. Add chosen veggies

  5. Add stock mixed in hot water

  6. And let that bubble and thicken

  7. And that’s it, voila
