Chilli Pesto Pasta
Ingredients
Pesto
- 1 garlic clove
- 1 fresh chilli
- 175g roasted red peppers (from a jar)
- 2 tbsp pine nuts
- 30g fresh basil
- 1/2 tsp salt
- 1/2 lemon juice
- 1 tbsp olive oil
- 1 tsp maple syrup
- 2 tsp tomato purée
Vegetables
- 1 courgette
- Olives
- Cherry tomatoes
- Spinach
Preparation
Cook the pasta according to package instructions.
In a food processor, blend the pesto ingredients until creamy with some texture.
In a pan with oil, sauté the courgette, olives, cherry tomatoes, and spinach until softened.
Add the pesto mixture to the pan and stir thoroughly.
Mix with the cooked pasta and serve.

This is a vegan variation with added vegetables for extra flavor and nutrition.
