Crispy Peanut Tofu

Ingredients

  • crispy peanut tofu
  • 14 oz. extra-firm tofu (pressed and drained), cubed
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp creamy peanut butter
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1/4 cup shredded vegan cheese

Preparation

  1. In a large bowl, whisk together soy sauce, peanut butter, rice vinegar, and maple syrup. Add cubed tofu and stir with a spatula to carefully coat tofu in sauce

  2. Heat up your skillet over medium heat with 1 tbsp coconut oil. Add tofu and spread out in an even layer. Cook for 3-4 minutes until one side is golden brown and flip. Add veggies to one side of the pan. Add a touch of water and cover. Cook for 3-4 minutes until veggies are tender. You can stop here for the peanut stir fry

  3. To make the scramble, turn your oven on high broil. Take a back of a fork to crumble tofu. Sprinkle on vegan cheese. Transfer pan to the oven for 2-3 minutes until cheese is melted. Carefully take pan out of the oven and serve
