Stir Fry Noodles with Tofu and Broccoli

Ingredients

  • 2 cups cooked udon noodles
  • 1/2 tablespoon sesame oil
  • 2/3 block organic extra firm tofu, crumbled
  • 1 tablespoon dark soy sauce
  • 2 cloves garlic
  • 1 cup broccoli florets
  • Extra sambal to serve (optional)

Sauce

  • 1 tablespoon mirin
  • 1 tablespoon agave or maple syrup
  • Juice of half lime
  • 3 to 4 teaspoons sambal
  • 1 tablespoon sesame oil
  • 2 tablespoons tamari
  • 1/2 tablespoon dark soy sauce
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon garlic powder

Preparation

  1. Whisk the sauce ingredients together in a bowl.

  2. Steam the broccoli florets until just crisp-tender.

  3. In a large pan over medium heat, add 1/2 tablespoon of sesame oil.

  4. Add the crumbled tofu.

  5. Cook, stirring occasionally, for 8 minutes.

  6. Add 1 tablespoon dark soy sauce and grated garlic.

  7. Cook for another 3 minutes, stirring often.

  8. Add the cooked noodles and the sauce.

  9. Cook for another 2 minutes.

  10. Add the broccoli.

  11. Cook for 1 minute.

  12. Serve with extra sambal if desired.
