Stir Fry Noodles with Tofu and Broccoli
Ingredients
- 2 cups cooked udon noodles
- 1/2 tablespoon sesame oil
- 2/3 block organic extra firm tofu, crumbled
- 1 tablespoon dark soy sauce
- 2 cloves garlic
- 1 cup broccoli florets
- Extra sambal to serve (optional)
Sauce
- 1 tablespoon mirin
- 1 tablespoon agave or maple syrup
- Juice of half lime
- 3 to 4 teaspoons sambal
- 1 tablespoon sesame oil
- 2 tablespoons tamari
- 1/2 tablespoon dark soy sauce
- 1/4 teaspoon ginger powder
- 1/4 teaspoon garlic powder
Preparation
Whisk the sauce ingredients together in a bowl.
Steam the broccoli florets until just crisp-tender.
In a large pan over medium heat, add 1/2 tablespoon of sesame oil.
Add the crumbled tofu.
Cook, stirring occasionally, for 8 minutes.
Add 1 tablespoon dark soy sauce and grated garlic.
Cook for another 3 minutes, stirring often.
Add the cooked noodles and the sauce.
Cook for another 2 minutes.
Add the broccoli.
Cook for 1 minute.
Serve with extra sambal if desired.
