Crispy Falafel Waffles with Lemon Tahini Dressing

Ingredients

  • 1 cup cooked chickpeas
  • 1/2 cup packed fresh cilantro
  • 2 teaspoons ground cumin
  • 1 teaspoon sea salt
  • 2 cloves garlic
  • 1 cup chickpea flour or besan
  • 1/2 to 1 cup water

Preparation

  1. Preheat the waffle iron.

  2. Put the first five ingredients in a food processor and pulse until broken down into small bits.

  3. Scrape down the sides and add the chickpea flour.

  4. Add water, starting with 1/2 cup, and process the mixture again.

  5. If the mix is still dry in parts, add more water and process again until it has the texture of very thick cake batter.

  6. Spray or brush some oil on the waffle iron (coconut oil can be used).

  7. Spread the batter on the waffle iron and cook according to the waffle iron's instructions until brown and crispy on the outside.

  8. Enjoy! Serving size depends on your waffle iron and may make about 4 large waffles.
