Refreshing Summer Rolls with Minced Soy

Ingredients

  • Rice paper sheets
  • Carrots
  • Cucumber
  • Spring onions
  • Lettuce or baby spinach

Minced soy filling

  • 1 package soy mince
  • 2 tablespoons hoisin sauce
  • 1 cm chopped ginger
  • 1 clove garlic
  • 1 onion
  • 1/2 chili
  • Lemon juice to taste
  • Salt to taste
  • 1/2 cup water
  • Rice flour (optional, for thickening)

Preparation

  1. Combine soy mince, hoisin sauce, chopped ginger, garlic, onion, chili, and 1/2 cup water in a pot; cook until onion and garlic are cooked through.

  2. Season the mixture with lemon juice and salt to taste. If too liquid, thicken with rice flour mixed in cold water.

  3. Slice carrots, cucumber, and spring onions into sticks.

  4. Soak rice paper sheets in water until softened, about 2 minutes.

  5. Assemble the summer rolls by placing the vegetables and minced soy on the softened rice paper and rolling it up
