Thyme Infused Hasselback Potatoes
Ingredients
- 1.3 kg maris piper potatoes
- Handful fresh thyme
- 1 garlic clove crushed
- 3 tbsp olive oil
- Salt & pepper
Preparation
Preheat your oven to 200°C with the oven dish inside.
In a pestle and mortar, add the fresh thyme leaves (removed from stalks), crushed garlic clove, 3 tablespoons olive oil, a pinch of salt and pepper, and mix well.
Slice the potatoes downwards, using chopsticks or wooden spoons to ensure even depth and prevent slicing all the way through.
Place the potatoes in the oven dish, spread the thyme oil evenly over them, ensuring it gets deep inside, season with a pinch of salt and pepper, and bake in the oven for 45 minutes at 200°C.
Season with a pinch of salt and pepper, sprinkle with fresh thyme, and serve.
Notes
You could make these the day before Christmas and reheat them in the oven for 15-20 minutes before serving.
