Peach and Avocado Salad with Lentils and Quinoa
Ingredients
- 3 to 4 servings salad greens
- 1 peach, sliced
- 1 1/4 cups sliced cherry tomatoes
- 1 avocado, diced
- 1 cup cooked quinoa
- 1 cup cooked lentils
- 1/2 of a sweet vidalia onion, thinly sliced
- Fresh basil leaves to taste
- Additional salt and pepper to taste
Lime vinaigrette
- Juice of 1 1/4 juicy lime
- 2 tablespoons + 1 teaspoon olive oil
- 1 teaspoon white wine vinegar or ACV or red wine vinegar
- 1 teaspoon dijon mustard
- 1/2 teaspoon kosher salt
- 1/2 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1 teaspoon agave nectar
Preparation
Cook lentils in vegetable broth until al dente and drain well
Cook quinoa according to package instructions
Whisk together all lime vinaigrette ingredients until well combined
Slice the peach, dice the avocado, and thinly slice the onion
Combine salad greens, peach, cherry tomatoes, avocado, quinoa, lentils, onion, and basil in a large bowl
Add the lime vinaigrette and toss gently to coat all ingredients
Season with additional salt and pepper to taste and serve immediately
