Oven-Baked Cauliflower Chickpea Shawarma
Ingredients
- 1 head cauliflower
- 1 can chickpeas
- 1/2 red onion
- 3/4 cup water
- 2 tablespoons cashew butter
- 1/2 teaspoon salt
- 1 teaspoon cumin seeds
- 1 teaspoon paprika
- 1/2 teaspoon nutmeg
- 1/2 teaspoon chili powder
- 1 teaspoon turmeric
- 1/2 teaspoon cayenne
- 1/2 teaspoon cinnamon
- 1 teaspoon oregano
- 1 teaspoon coriander
- 3 cloves garlic
- 1 tablespoon maple syrup
- 1 tablespoon brown rice flour
- 1 tablespoon arrowroot powder
Preparation
Preheat oven to 425 degrees.
Add cauliflower, onion and chickpeas to a bowl and set aside.
In a blender, combine all other ingredients to make a sauce.
Pour half of sauce over cauliflower, onion and chickpeas, toss to coat and set remaining sauce aside.
Spread on parchment lined baking sheets, making sure it is not too crowded.
Bake for 25-30 minutes tossing halfway through.
Remove and toss with remaining sauce, return to oven and broil for 2-3 minutes.
Serve shawarma in naan bread, topped with Sriracha, tzatziki, and cucumber parsley salad.
