Vegan Tostones Burger with Garlic Lime Sauce

Ingredients

Patties

  • 1 tsp of olive oil
  • 2 cloves of garlic
  • 1 cup of crimini mushrooms
  • 1 tsp of cumin
  • 1/2 tsp of salt
  • 1/2 tsp of paprika
  • 1/4 tsp of dried oregano
  • 1/4 tsp of black pepper
  • 1/4 tsp of coriander
  • 1 cup of black beans
  • 1/3 cup of sliced kalamata olives
  • 1/4 cup of ground walnuts
  • 1 cup of cooked red quinoa

Sauce

  • 2 cloves of garlic
  • 1 tbs of fresh squeezed lime juice
  • 3 tbs of mayo
  • 2 tbs of coconut cream
  • 1/8 tsp of cayenne pepper

Toppings

  • Whole wheat buns
  • Fresh baby arugula
  • Sliced hass avocado
  • Tostones
  • Pan seared red onions

Preparation

  1. In a large pan on medium heat add olive oil and garlic. Stir until fragrant and add mushrooms along with seasonings stir well and add black beans and olives.

  2. Cook mixture for 5 minutes. Once time is up transfer mixture into a blender or food processor and blend a few pulses (avoid over blending).

  3. Place mixture into a bowl and add ground walnuts and red quinoa stir well with a fork. Preheat oven to 375°.

  4. Form mixture into desired patty sizes and place onto a greased baking sheet. Place patties in oven for 15 minutes. Once time is up remove and allow to cool for 5 minutes.

  5. Flip patties over and place back in oven for another 15 minutes. Once time is up remove and allow to cool for 10 minutes.

  6. Place ingredients for sauce into a pestle and mortar grind smooth until sauce is formed. Place arugula onto buns followed by patty, avocado, tostones, red onion, and sauce. Finish with top bun serve and enjoy.
