Enchanting Chocolate Forest Cake
Ingredients
- 1 cup unsweetened oat milk
- 1 cup warm coffee
- 1/2 cup melted coconut oil
- 2 tablespoons apple cider vinegar
- 2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup cocoa
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
Buttercream
- 2 cans coconut cream
- 1/2 cup cacao powder
- 1 1/2 cups icing sugar
Preparation
Preheat oven to 350°F and prepare your pans.
Prepare buttermilk by combining vinegar with milk.
Sift all dry ingredients in one bowl.
Add wet ingredients in a separate bowl, including the buttermilk.
Pour wet ingredients into dry ingredients.
Stir until combined and mixed well.
Pour batter into prepared pans.
Bake for 45 minutes or until firm.
For buttercream, chill coconut cream cans and remove the cream.
Mix coconut cream with cacao powder and icing sugar.
Adjust icing sugar if too watery or add more cacao powder as needed; it should firm up after mixing.
Frost the cake and decorate.
Tips
Save the coconut water from the cans for use in a smoothie or other recipes.
