Cauliflower and Chickpea Tikka Masala
Ingredients
- 1 medium onion, sliced
- 1 small cauliflower, chopped into florets
- 1 jar (250ml) tikka masala pasta
- 1 can (400g) coconut milk
- 1 can (400g) chopped tomatoes
- 1 can (400g) chickpeas, drained
- rice to serve
Preparation
Add some oil to a deep non stick pan on a medium heat and sauté the onions for a few mins
Add the cauliflower florets then the tikka masala paste and stir
Cook for a minute to release the aromas then add the coconut milk and chopped tomatoes
Stir everything together, add the chickpeas, then pop a lid on and simmer on a low heat for 10 mins
Serve with steaming hot rice
