Cauliflower and Chickpea Tikka Masala

Ingredients

  • 1 medium onion, sliced
  • 1 small cauliflower, chopped into florets
  • 1 jar (250ml) tikka masala pasta
  • 1 can (400g) coconut milk
  • 1 can (400g) chopped tomatoes
  • 1 can (400g) chickpeas, drained
  • rice to serve

Preparation

  1. Add some oil to a deep non stick pan on a medium heat and sauté the onions for a few mins

  2. Add the cauliflower florets then the tikka masala paste and stir

  3. Cook for a minute to release the aromas then add the coconut milk and chopped tomatoes

  4. Stir everything together, add the chickpeas, then pop a lid on and simmer on a low heat for 10 mins

  5. Serve with steaming hot rice
