Moist Chocolate Cake with Sour Cream and Chocolate Glaze

Ingredients

Batter

  • 250 g softened butter
  • 200 g sugar
  • 1 packet vanilla sugar
  • 3 large eggs
  • 200 g sour cream
  • 200 g all-purpose flour
  • a pinch of salt
  • 6 tablespoons unsweetened cocoa powder
  • 3 teaspoons baking powder
  • 4 tablespoons milk
  • 100 g dark chocolate shavings
  • butter for the pan

Glaze

  • 150 g dark chocolate
  • 100 g heavy cream

Preparation

Baking the cake

  1. Preheat the oven to 356°F (180°C) conventional or 320°F (160°C) convection

  2. Grease an 8-inch (20 cm) springform pan

  3. Beat softened butter, sugar, and vanilla sugar until creamy

  4. Add eggs one at a time, beating well after each addition

  5. Add sour cream and mix until combined

  6. Whisk together flour, salt, cocoa powder, and baking powder in a separate bowl

  7. Add dry ingredients to the batter and mix until just combined

  8. Stir in milk

  9. Fold in dark chocolate shavings

  10. Pour batter into the prepared pan

  11. Bake for about 45 minutes until a toothpick inserted comes out with a few moist crumbs

  12. Let cake cool completely in the pan, then remove and place on a serving plate

Glaze

  1. Chop dark chocolate and place in a heatproof bowl

  2. Heat cream until just boiling, then pour over chocolate

  3. Let stand for 2 minutes, then stir until smooth and glossy

  4. Pour glaze over the cooled cake and spread around the sides with a palette knife

  5. Let chocolate set slightly before serving
