Soft and Sugary Snickerdoodle Cookies

Ingredients

  • 1 1/4 cup of all-purpose flour
  • 1/2 cup of cane sugar
  • 1 tsp of cinnamon
  • 1/2 tsp of aluminum free baking powder
  • 1/2 tsp of baking soda
  • 1/2 cup of vegan spread
  • 1/3 cup of coconut oil

Preparation

  1. Combine all dry ingredients in a medium-sized bowl and stir well.

  2. Add wet ingredients to the same bowl and stir until dough starts to form.

  3. Preheat oven to 400 degrees and line a cookie sheet on a baking pan.

  4. On a small plate or bowl, sprinkle equal parts cinnamon and sugar, take small pieces of dough and form into a small ball.

  5. Roll ball onto plate until completely coated, place onto baking sheet and repeat process until finished.

  6. Grab a fork and press down gently on dough balls and then press down the other way to form a checkerboard-like pattern.

  7. Place in oven for about 10 minutes then remove and allow to cool for 5 minutes and enjoy.
